Sweet Potato Casserole

Prepare

  1. Wrap the sweet potatoes in foil and bake them for 1 hour in a 400°F oven.

  2. Remove the skin from the potatoes, slice them into smaller pieces, and let them cool for 5 minutes.

  3. Blend the potatoes in a food processor for a few seconds, and then add the half & half, eggs, sugar, vanilla, cinnamon, and nutmeg. Blend until well combined.

  4. Pour the mixture into a dish, and bake it for 15 minutes at 350°F.

  5. Remove the casserole from the oven. Top it with the brown sugar and mini marshmallows.

  6. Bake the casserole for 5 to 10 minutes more. Don’t let those marshmallows burn!
