- 4 large sweet potatoes
- 1/2 cup sugar
- 1/3 cup half & half
- 1/3 cup unsalted butter, melted
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup brown sugar
- 1/2 bag mini marshmallows
Wrap the sweet potatoes in foil and bake them for 1 hour in a 400°F oven.
Remove the skin from the potatoes, slice them into smaller pieces, and let them cool for 5 minutes.
Blend the potatoes in a food processor for a few seconds, and then add the half & half, eggs, sugar, vanilla, cinnamon, and nutmeg. Blend until well combined.
Pour the mixture into a dish, and bake it for 15 minutes at 350°F.
Remove the casserole from the oven. Top it with the brown sugar and mini marshmallows.
Bake the casserole for 5 to 10 minutes more. Don’t let those marshmallows burn!
